Wife made and canned spaghetti sauce last night from some of our tomatoes, peppers, zucchini, etc., so I had spaghetti and she had spaghetti squash topped from her freshly-prepared sauce that wouldn't fit in the canner. We plan on the same tonight. She made vegetable soup today and canned that as well. There is a little of that left over as well, so that may be for tomorrow.

Chiken Quesadillas made with Mozzarella Cheese for me and Cheddar Cheese for my son. Or I may splurge just once and have Cheddar Cheese since my A1c is 5.6%, which is a daily average of 114 mg/dL / 73.2 mmol/L. This is 0.3% higher than the best I could on my bike, riding 10 to 15 miles a day. But that was a lot more fun than scooting backwards up and down the hallways of our apartment building.

We're having chicken livers with onions and a side dish we haven't decided. Hubby likes sweet potatoes and I like everything else.

We had steak last night and my wife wanted it grilled on the propane grill outside, so at 4 F./-15.5 C., I was outside trying to grill a steak. The grill ran out of gas part way through, so I had to change the tank and start over. We also had our home-grown green beans and baked potatoes. It was quite good when all done.
